Healthy Strawberry Rhubarb Crumble
One of my clients has generously been sharing her rhubarb this spring and we have been enjoying delicious and healthy strawberry rhubarb crumble on a weekly basis.
It’s been pretty much guilt-free as there is no processed sugar. The recipe contains 1/4 cup pure maple syrup and 2 tablespoons of butter. Everything else is fresh fruit (though technically rhubarb is a vegetable - who knew?) and healthy grains.

Ingredients:
2 cups of rhubarb, cut into 1/2 inch pieces
2 cups fresh or frozen strawberries, cut in half or quartered if large*
1 medium orange
1 TBSP cornstarch
1/4 cup pure maple syrup
1/3 cup oats
1/3 cup buckwheat groats**
2 TBSP butter, softened or at room temperature
1/2 tsp salt
Directions:
Preheat your oven to bake 375.
Grate the orange peel and split between one large and one medium bowl.
Squeeze the juice from the orange into a separate small bowl. Add the cornstarch to this small bowl of juice and whisk until combined.
In the large bowl with 1/2 of the orange peel, add strawberries, rhubarb, maple syrup, the cornstarch/orange juice mixture and mix well. Pour the mixture into a glass 9” pie pan.
In the medium bowl with the other half of the orange peel, add the oats, buckwheat and butter and mix with a fork until well combined and “crumbly”. Spread this mixture over the fruit in the pie pan. (It looks like it won’t be enough as it barely covers the fruit mixture, but it really is.)
Bake for 45 minutes. Allow to cool and enjoy! — We did try to eat it right out of the oven and it really was “burn your mouth hot”! Plus it thickens as it cools a bit.
*If you use frozen strawberries, let them thaw first. We’ve also made this with 2 cups of blueberries and that also has been amazingly delicious!
**You can purchase buckwheat groats in the bulk section of your local coop. Some supermarkets may also carry them. They’re an unusual ingredient for most people to have on hand but they’ve become an essential in our home because of the crunch and healthiness they add to to dishes like this one. If you choose not to use them, you can simple double the amount of oats.
