Cauliflower Steaks

Yes, it’s another vegetable recipe but this week it’s not in the air fryer. Cauliflower steaks are an incredibly easy and kind of fun vegetable to make, plus it’s really good for you.

Here are some of the health benefits of cauliflower:

  • One cup contains only 27 calories and more than half of your daily recommended dose of Vitamin C

  • It’s a good source of fiber, which helps slow digestion and makes you feel full faster

  • Cauliflower contains many antioxidants, which help reduce inflammation and fight numerous diseases

  • It has a very high water content (92%) which means you’re eating some of your water for the day!

  • It’s super low carb (1 cup of cauliflower contains only 5 grams of carbs versus 44 grams for rice) and versatile - it’s easy to sub out cauliflower for rice or other grains and legumes

What’s not to love about it?

Ingredients:

1 head of cauliflower
EVO olive oil spray (or healthy equivalent)
salt and pepper to taste

Directions:

  1. Preheat oven to 425 degrees.

  2. Rinse cauliflower and cut into 1” steaks - you’re simply cutting the cauliflower into big pieces, some of it will crumble and that’s fine

  3. Lightly spray a baking sheet with olive oil spray and lay the cauliflower steaks and smaller pieces on the sheet.

  4. Spritz with olive oil and add salt and pepper to taste.

  5. Cook for approximately 6 minutes per side or until the cauliflower is soft when poked with a fork and slightly crispy on the outside. (You may want to spritz the cauliflower a second time when you flip them - this helps give it the crispy edge and adds flavor)

I’ve only included salt and pepper in this recipe to keep it simple but you can put just about anything on your cauliflower steaks.

Add smoked paprika, curry powder, garlic powder, berbere, or any other seasoning that you love and can imagine enhancing the flavor of your “steaks”.

Enjoy an easy vegetable that dramatically improves the quality of your health!
